Pina colada fool

Ingredients

Quantity Ingredient
1 cup Drained unsweetened crushed pineapple
cup Whipping cream
½ cup Sweetened shredded coconut
1 tablespoon Coconut liqueur or rum (opt)
Mint sprigs (opt)

Directions

In blender or food processor, puree half of the pineapple; add to remaining pineapple. In separate bowl, whip cream; fold in pineapple, coconut and coconut liqueur (if using).
