1 Envelope unflavored gelatin
½ cup Water
¾ cup Lowfat buttermilk
½ cup Canned crushed pineapple: no sugar added
½ teaspoon Vanilla extract
¼ teaspoon Pineapple extract; optional
3 Ice cubes

Directions

Reserve some of the crushed pineapple for garnish.

Sprinkle gelatin over water in small saucepan; heat slowly until gelatin dissolves. Pour dissolved gelatin into blender container; add remaining ingredients except ice cubs; process at medium speed until smooth. Turn blender to high speed: add ice cubes one at a time. Pour pineapple mixture into a medium bowl. Chill until set. Makes 1 serving. 485 CALS, 3.1g fat.
