Pineapple slices with a banana, ginger and rum syrup

200 | millilitres | Water; (6.6fl oz) |
12 | Pineapple slices |
Directions
Caramelise the sugar with some water and add the water to form a syrup.
Pure the bananas and ginger with the syrup, and add the rum. In a large roasting tin bake the pineapple slices for about 40 minutes in a hot oven and lift them out onto a rack to drain. Serve hot or cold with an ice cream and some the of the sauce.
