Pineapple zucchini

Quantity Ingredient
4 quarts Peeled, seeded, cubed or grated zucchini
3 cups White sugar
½ cup Lemon juice
48 ounces Can unsweetened pineapple juice
2 eaches 3oz boxes pineapple Jello

Directions

Mix together the zucchini, sugar, lemon and pineapple juice. Bring to a boil and add pineapple jello. Stir to dissolve. Cook until zucchini is soft, but not mushy, about 20-30 minutes. Cool.
