1 | large | Garlic clove, peel and split |
¾ | ounce | Parmesan cheese, grated |
2¼ | cup | Tomato juice |
1¾ | cup | Beef broth |
½ | teaspoon | Dried oregano |
½ | teaspoon | Dried basil |
Directions
To prepare cheese croutons, dry out the bread in a 300 oven for 15 minutes. Rub each slice with garlic, sprinkle evenly with the Parmesan, and run under the broiler to brown lightly. Keep warm. In a medium saucepan, combine the tomato juice, broth, oregano, and basil, heat to boiling.
