Pizza with mozzarella clams and tomatoes - bon appetit

Ingredients

2 tablespoons Olive oil
2 Garlic cloves, minced
¼ teaspoon Dried crushed red pepper
1 cup Packed grated mozzarella cheese (about 4 oz)
3 tablespoons Chopped fresh parsley
2 tablespoons Freshly grated Parmesan cheese
1 tablespoon Chopped fresh thyme or 1 t dried
1 10-oz tube refrigerated All Ready Pizza Crust
Nonstick vegetable oil spray
2 larges Plum tomatoes, thinly sliced
1 can (6 1/2-oz) chopped clams, drained

Directions

Prepare barbecue (medium heat). Mix oil, garlic and crushed red pepper in small bowl. Let stand 10 minutes. Combine mozzarella, parsley, Parmesan cheese and thyme in medium bowl. Unroll pizza dough on heavy large baking sheet. Stretch dough into 12-inch square. Cut dough into 4 squares.

Spray grill rack with vegetable oil spray. Place dough squares on grill rack and grill until tops are dry and set and bottoms are light brown, about 3 minutes. Using spatula, transfer dough, grilled side up, to baking sheet. Brush top of dough with oil mixture. Cover with tomato slices and sprinkle with clams and cheese mixture. Return pizzas to grill, tent with aluminum foil and cook until cheeses melts and bottoms of pizza squares are crisp, about 3 minutes. Transfer to plates and serve.
