Tomato and grilled zucchini salad - bon appetit

Ingredients

2 pounds Medium-large zucchini, trimmed, halved lengthwise
2 tablespoons Plus 1 C olive oil
2 cups Fresh basil leaves
3 Garlic cloves, coarsely chopped
3 tablespoons Balsamic vinegar
1 tablespoon Dijon mustard
pounds Large tomatoes, sliced

Directions

Prepare barbecue (medium-high heat). Position grill rack about 6 inches above heat source. Brush zucchini on all sides with 2 T oil.

Grill until tender, turning occasionally, about 8 minutes. Transfer to plate and cool.

Puree basil, garlic, vinegar and mustard in processor. With machine running, add 1 C oil; process until dressing is thick. Season with salt and pepper.

Place tomatoes on platter. Cut zucchini into 1½-inch pieces. Mix zucchini and ¾ C dressing. Spoon onto platter. Drizzle remauung dressing over tomatoes.
