Pork roast salsa

1 small Can pineapple rings; drained
2 tablespoons Red bell pepper; diced
3 Green onions; sliced fine lengthwise
¼ teaspoon Ground ginger
1 ounce Lemon juice
1 ounce Tequila
1 tablespoon Fresh mint leaves; chopped

Directions

Cut pineapple rings into ¼-inch pieces. Mix with all other ingredients. Chill very well. Serve with pork roast.

Judi's Notes: This tastes so much better with fresh pineapple. I added a fresh peach to it and it turned out very well.
