Potato beef hash

2 | eaches | Potatoes, cubed and parboiled |
1 | teaspoon | Vegetable oil |
1 | each | Onion, chopped |
1 | each | Clove garlic, minced |
1 | teaspoon | Oregano |
1 | teaspoon | Basil |
1 | pounds | Lean ground beef |
¾ | cup | Mozzarella cheese, grated |
Salt and pepper to taste | ||
2 | cups | Canned stewed tomatoes, chopped |
Directions
Peel and cube the potatoes. Cook beef in a skillet until browned.
Drain and rinse off any fat that cooks out of beef. While draining cooked beef, saute the onion, garlic, basil and oregano. Add drained beef. Arrange cooked beef in a greased casserole dish and lay the cubed parboiled potatoes on top. Pour the tomatoes over top, and sprinkle cheese on top of the tomatoes. Bake In a 350F oven for about 30-45 minutes, or until potatoes are cooked completely. Makes about 4 servings. Origin: Adapted from Canadian Living, Sept/95.
