Mashed potatoe corned beef hash

Leftover boiled potatoes | ||
1 | large | Onion; peeled and coarsely chopped |
3 | tablespoons | Butter |
Leftover corned beef; diced | ||
Salt & pepper to taste |
Directions
Mash potatoes with small amount of corned beef cooking liquid, enough to bind Saute chopped onions in butter until lightly browned. In a large bowl combine mashed potatoes, cooked onions, and corned beef and enough pepper and salt to your taste. Form mixture into patties. Fry in oil until browned on both sides. Top with a poached egg if you like. Very good served with preceeding Mustard Sauce recipe. Uncooked patties can be wrapped in plastic film and will keep in the refrigator for 3 - 4 days.
