Potato chip shortbread cookies

Ingredients

Quantity Ingredient
2 cups Margarine, softened
1 cup Sugar
2 teaspoons Vanilla extract
3 cups Flour
1 cup Pecans, chopped
2 cups Potato chips, crushed
2 cups Confectioners' sugar or more

Directions

Cream margarine, sugar and vanilla in mixer bowl until light and fluffy. Add flour; mix well. Stir in pecans and porato chips. Drop by teaspoonfuls onto nonstick cookie sheet. Bake at 350ø for 10 to 15 minutes or until golden. Sprinkle with confectioners' sugar.

Cool on wire rack.
