Potato pancakes^

Ingredients

3 pounds Potatoes, grated
4 Egg whites, beaten
1 large Onion, grated
¼ cup Flour
1 tablespoon Low sodium soy sauce

Directions

Grate potatoes into cold water so they don't turn brown. then squeeze water out quickly. Add eg whites, mix well to coat; then add onion, flour and soy sauce. Spray a nonstick skillet with Pam. Drop spoonfuls of mixture into skillet; cook until crispy. makes 16 pancakes.
