2 tablespoons Margarine
1 cup Fat-free sour cream
1 medium Onion; sliced
cup Cheddar cheese; shredded
1 teaspoon Salt
teaspoon Black pepper
¼ teaspoon Paprika

Recipe by: Elizabeth Powell Preparation Time: 1:30 Preheat oven at 350. Prepare a 1½ quart baking dish with cooking spray. Boil potatoes until tender. Mash with margarine, sour cream, onions, ¾ cup cheese, salt and pepper. Turn mixture into baking dish. Sprinkle with remaining cheese and paprika. Bake uncovered, for 40 minutes.
