Prime minister eggplant a la golda

1 medium Large eggplant
Salt
3 larges Eggs
2 teaspoons Water
¾ cup Grated parmesan cheese
Oil for frying
1 cup Tomato puree
¼ teaspoon Salt
teaspoon Pepper
1 teaspoon Sugar
2 tablespoons Lemon juice

Directions

Peel the eggplant and slice it thinly crosswise. Sprinkle, each slice with salt and set it aside so that the bitter juice can drain off.

beat the eggs with waer, salt and cheese. Dip each eggplant slice in the egg-cheese batter and fry it on both sides in very hot oil Remove and set it aside on a paper
