Pumpkin pie squares 2

Ingredients

Quantity Ingredient
¾ cup Flour
½ cup Rolled oats
¼ cup Packed brown sugar
½ cup Butter; softened
½ cup Chopped pecans
14 ounces Canned pumpkin
300 millilitres Eagle Brand Low Fat Milk
2 Eggs; beaten
1 teaspoon Ginger
1 teaspoon Cinnamon
½ cup Coconut; optional

Directions

Combine flour, oats and sugar. Cut in butter till crumbly. Stir in pecans. Press into 9" square baking dish. Bake at 350 for 15 minutes.

Combine remaining ingredients,except coconut. Pour over base. Sprinkle with coconut. Return to oven and bake another 25 - 30 minutes or until set.

Serve warm or chilled.
