2 cups Quinoa, cooked -- (basic
Recipe)
3 cups Soy or rice milk -- or cows
Milk
cup Honey -- Or
½ cup Brown sugar (if using real
Mex cane sugar -- use less)
Egg subst. for 3 eggs -- or
3 Eggs
teaspoon Salt
1 tablespoon Soy butter or oil -- (or
Butter)
1 teaspoon Vanilla
½ cup Raisins
½ cup Shredded coconut
½ cup Almonds or walnuts --
Ground
½ teaspoon Cinnamon
½ teaspoon Lemon or orange rind --
Grated
1 teaspoon Lemon juice

Directions

Combine all ingredients. Pour nto greased baking dish or greased individual custard cups. Bake n 350 degree oven until set, about 45 minutes. Serve hot or cold, topped with vegan yogurt, soy or rice cream or apple juice.
