Quinoa pudding, vegan

1 | cup | Dried apples; chopped (or substitute anyther dried fruit) |
½ | cup | Dried apricots; chopped, or- (up to) |
2 | Fresh peaches or nectarines; chopped (up to) | |
2 | teaspoons | Cinnamon |

Date: Tue, 9 Jul 1996 13:15:48 -0400 I made this up, it makes a lot, you could halve the recipe if it is too much for your family. It is a delicious sweet way to add alternative grains to your diet.
rinse 1 cup quinoa and simmer in 2 cups water for about 20 minutes, or until all water is absorbed. Add apple juice, dried dates, dried apples, dried apricots, and cinnamon. Bring to a simmer, cook and stir for about 10 minutes. Chill.
Experiment with other flavors of juice and other dried/fresh fruits.
