Recipe: frijoles rancheros

Ingredients

Quantity Ingredient
2 mediums Tomato raw
1 medium Green pepper
2 ounces Canned chilies
1 cup Onion chopped
1 medium Garlic clove crushed
1 teaspoon Oregano
30 ounces Pinto Beans canned
2 tablespoons Fresh cilantro

Directions

Dice the pepper, tomatoes, onions and chilies. Add a little oil to a medium heated fry pan. Add tomatoes, bell pepper, chiles, onion, garlic and oregano. Saute stirring occasionally for about 5 minutes.

Adjust heat to low and mix in the beans. Cook about 15 minutes stirring often. Serve and sprinkle with cilantro. ---end Submitted By HENRY REINTGES On 07-05-95
