Red beans and rice w. sausage

Ingredients

1 | large | Bag of dry red beans |
1 | large | Onion, chopped |
2 | Garlic cloves, chopped fine | |
1½ | Inch slice of slab bacon | |
1 | tablespoon | Shortening |
1 | tablespoon | Parsley |
1 | tablespoon | Flour |
1 | pounds | Sausage, hot, cook and drain |
Directions
Soak beans overnight. Place beans in 1½ quarts of cold water over medium heat. Add slice of bacon and bring to a boil, lower heat and simmer until beans are tender. Remove from heat. Heat shortening and add flour, onions and garlic. Fry until soft but not brown. Add mixture to beans. Let cook over low heat. Add parsley and stir well until creamy. Add sausage. Serve over a bed of cooked white rice.
