Refried beans with tomato

Ingredients

2 | cans | (15oz.) of pinto beans |
3 | tablespoons | Olive oil |
1 | medium | Onion, chopped |
1 | teaspoon | Hot Sauce (like Tabasco or Religious Experience) |
2 | mediums | Tomatoes, peeled, seeded, chopped |
1 | tablespoon | Diced red bell pepper |
½ | cup | Sour cream |
2 | tablespoons | Chopped scallion |
Directions
1. Mash beans with a potato masher, or in a food processor.
2. In a large frying pan, heat olive oil. Add onion, chilies, bell pepper, and tomatoes. Cook until onion is translucent. Add mashed beans and hot sauce. Cook over low heat, stirring frequently, for 7-10 minutes. Serve warm as a side with a dollop of sour cream and some chopped scallion for garnish.
