Rhubarb coffee cake #2

Ingredients

cup Sugar
½ cup Shortening
1 tablespoon Butter
1 Egg
1 tablespoon Cinnamon
1 cup Buttermilk
½ cup Sugar
1 teaspoon Salt
1 teaspoon Baking soda
1 teaspoon Vanilla
2 cups Flour
2 cups Finely chopped rhubarb

They are great recipes for kids to do because there really is no way to ruin them. I made up the 2nd recipe because we needed a dessert for company. The kids ended up eating most of it! I would love any comments on the cake- whether you liked it or not.

mix everything except the rhubarb together in a large bowl. jStir in rhubarb. Pour into 9 x 13 pan. Combine topping and sprinkle over batter.

Bake in preheated oven @350 degrees for 30-35 minutes.
