Rice & vegetables in wine

Ingredients

Quantity Ingredient
2 tablespoons Oil
1 each Onion, chopped
1 medium Zucchini, chopped
1 medium Carrot, chopped
1 each Stalk celery, chopped
1 cup Long grain rice
cup Vegetable stock
1 cup White wine

Directions

Heat the oil in saucepan and saute the onion. Add the rest of the veggies and stir them over a medium heat, until lightly browned. Add the rice, veg stock and white wine, cover and cook 15-20 mins until all the liquid has been absorbed.
