Rice and vegetables in wine

Ingredients

Quantity Ingredient
2 tablespoons Vegetable oil
1 Onion; chopped
1 medium Zucchini; chopped
1 medium Carrot; chopped
1 each Celery stalk; chopped
1 cup Long grain rice
cup Vegetable stock or water
1 cup White wine

Directions

Heat the oil in a saucepan and saute the onion. Add the rest of the vegetables and stir them over a medium heat until browned.

Add the rice, vegetable stock and white wine, cover and cook for about 15-20 minutes until all the liquid has been absorbed.

30 minutes to make. Good source of vitamin A.
