Ricotta filling (for ricotta cake roll)

8 | eaches | Ounces light cream cheese (Neufchatel), softened (1 pkge) |
15 | eaches | Ounces part-skim ricotta cheese (1 container) |
½ | cup | Confectioner's sugar |
1 | teaspoon | Vanilla extract |
¼ | teaspoon | Ground cinnamon |
1 | each | Square semisweet chocolate (1 ounce), finely chopped |
Directions
Beat the cream cheese with a spoon in a large bowl until smooth. Beat in the ricotta cheese, sugar, vanilla and cinnamon until smooth. Stir in the finely chopped chocolate. Cover and refrigerate until ready to use as the filling for Ricotta Cake Roll.
