Ricotta filling (for ricotta cake roll)

8 eaches Ounces light cream cheese (Neufchatel), softened (1 pkge)
15 eaches Ounces part-skim ricotta cheese (1 container)
½ cup Confectioner's sugar
1 teaspoon Vanilla extract
¼ teaspoon Ground cinnamon
1 each Square semisweet chocolate (1 ounce), finely chopped

Directions

Beat the cream cheese with a spoon in a large bowl until smooth. Beat in the ricotta cheese, sugar, vanilla and cinnamon until smooth. Stir in the finely chopped chocolate. Cover and refrigerate until ready to use as the filling for Ricotta Cake Roll.
