Roasted garlic salad

Ingredients

1 Red bell pepper, roasted,
Peeled and cut into
1/4-inch strips
¾ pounds Green beans, steamed tender
1 Head of garlic, roasted,
Peeled,chop
3 tablespoons Chopped, marinated
Sun-dried tomatoes, drained
1 tablespoon Chopped fresh basil leaves
2 tablespoons Toasted pine nuts or chopped
Walnuts
2 tablespoons Herbed olive oil
2 tablespoons Balsamic vinegar
3 cups Chopped salad greens
Salt and pepper to taste
½ cup Grated Asiago, Romano or
Feta cheese

Directions

In large mixing bowl, toss all ingredients. Makes 4 servings.
