Roasted rack of lamb with garlic and herbs - bon appetit

Ingredients

Quantity Ingredient
2 tablespoons Dried oregano
2 tablespoons Dried thylme
1 tablespoon Fennel seeds
1 tablespoon Dried rosemary
teaspoon Dried rubbed sage
¼ cup Olive oil
2 tablespoons Chopped garlic
2 1 1/2-lb racks of lamb

Directions

Preheat oven to 400F. Combine first 5 ingredients in small bowl.

Combine oil and garlic in another small bowl. Rub oil mixture over each lamb rack. Season generously with salt and pepper. Press 3 T spice mixture all over each lamb rack. Place lamb in baking pan.

Roast until thermometer inserted into center registers 135F for medium-rare, about 20 minutes. Transfer lamb racks to platter and let stand 5 minutes.

Carve lamb into individual chops, arrange on platter and serve.
