Roasted red pepper corn

Ingredients

Quantity Ingredient
4 mediums Ears fresh corn
Butter-flavored vegetable
Cooking spray
¼ cup Diced sweet red pepper

Directions

Remove husks and silk from corn. Place each ear on a piece of heavy-duty aluminum foil, and coat with cooking spray. Sprinkle 1 tablespoon sweet red pepper on each ear of corn. Roll foil lengthwise around corn, and twist foil at each end. Bake at 500 degrees for 20 minutes.

Per ear: 89 calories, 2.5g protein, 1.6g fat, 19.3g carbohydrate, 0mg choesterol, 13 mg sodium, 2mg calcium.
