Roasted rock shrimp with two chilies

Ingredients

Quantity Ingredient
1 tablespoon Chipotle chiles finely chopped (canned or bottled)
1 Anaheim or New Mexico green chile trimmed, seeded, sliced
2 Garlic clove(s), minced
1 tablespoon Ginger, minced or grated
1 tablespoon Lemon or lime juice
pounds Shrimp

Directions

Preheat oven to 400F. In a large bowl, combine the chile pepper, garlic, ginger and lemon juice. Stir to mix, then add the shrimp and stir until the shrimp are evenly coated. Let sit for 5 minutes.

Pour the shrimp mixture into a shallow baking dish and roast the shrimp until they are just opaque through, 8-12 minutes.

Spoon onto individual plates, with rice alongside, if desired.
