Roasted rock shrimp with two chilies

Ingredients

1 | tablespoon | Chipotle chiles finely chopped (canned or bottled) |
1 | Anaheim or New Mexico green chile trimmed, seeded, sliced | |
2 | Garlic clove(s), minced | |
1 | tablespoon | Ginger, minced or grated |
1 | tablespoon | Lemon or lime juice |
1½ | pounds | Shrimp |
Directions
Preheat oven to 400F. In a large bowl, combine the chile pepper, garlic, ginger and lemon juice. Stir to mix, then add the shrimp and stir until the shrimp are evenly coated. Let sit for 5 minutes.
Pour the shrimp mixture into a shallow baking dish and roast the shrimp until they are just opaque through, 8-12 minutes.
Spoon onto individual plates, with rice alongside, if desired.
