Sausage and cheese quesadillas

⅓ | cup | Onion; chopped |
2 | cloves | Garlic; minced |
2 | tablespoons | Cilantro; chopped |
1 | Jalapeno pepper; seeded and chopped | |
6 | Flour tortillas; 7\" | |
2 | tablespoons | Oil |
1 | cup | Monterey jack; shredded |
Directions
For filling, in a medium skillet cook sausage, onion, and garlic till onion is tender but not brown. Drain off fat. Pat sausage mixture with paper towels to remove additional fat. Stir in cilantro and jalapeno pepper; set filling aside. Brush one side of 3 tortillas with oil. Place tortillas, oill side down, on a large baking sheet.
Spread some of the sausage filling over each tortilla on baking sheet; sprinkle with cheese. Top with remaining tortillas. Brush top of tortillas with remaining oil. Preheat gas grill. Place on grill rack over medium heat. Cover and grill for 3 to 4 minutes or till heated through and tortillas start to brown, turning once. To serve, cut into wedges. 302 calories and 19 grams fat.
