Sausage sauce piquant

Ingredients

1 pounds Smoked sausage, sliced
2 tablespoons Oil
2 tablespoons Flour
1 each Mdm onion, chopped
½ each Green pepper, chopped
16 ounces Can tomatoes
2 cups Water
Salt and pepper
Rice
Brown sausage. Drain well.

Directions

In a Dutch oven, combine oil and flour and stir constantly over low heat until you have a deep rich colored roux. Add onions and green pepper and saute a few minutes, until tender. Add sausage, tomatoes, water, salt, and pepper. Cover and simmer at least 1 hour. Serve over rice. Serves 4-6
