Sausages in tomato and basil sauce

Ingredients

2 pounds Farmhouse sausages; (or any good quality
; sausage), cooked
; until brown
3 pounds Very ripe tomatoes
1 can Peeled tomatoes
1 large Hand basil; chopped
1 large Onion; chopped
3 Cloves garlic; chopped
1 tablespoon Chopped parsley
2 Bay leaves
1 tablespoon Tomato puree
4 tablespoons Olive oil
1 teaspoon Sugar
1 pinch Ground cumin; ground
Coriander
Curry powder
1 pinch Mixed herbes de provence
Salt and pepper to taste

Directions

1 Fry the onion and garlic in the olive oil until golden, add the tomato paste and stir until it becomes very thick. Add the bay leaf and tomatoes and cook for 10 minutes with the lid on.

2 Add the pre-cooked sausages and the remaining ingredients (apart from the fresh basil) and cook for 15 minutes. Add the fresh basil just before serving.
