Scallops with basil-lemon sauce

4 | tablespoons | I Can't Believe It's Not Butter! |
1 | Garlic clove; minced | |
1½ | pounds | Bay or sea scallops; rinsed, well dried |
3 | tablespoons | Fresh basil leaves; chopped |
2 | tablespoons | Fresh lemon juice |
Salt and freshly ground; pepper to taste |
Directions
1. In large, heavy skillet, over medium heat, melt I Can't Believe It's Not Butter! Add garlic and cook until softened. Do not brown.
2. Add scallops and basil and saut over medium-high heat, stirring constantly, for 2 minutes.
3. Add lemon juice and continue cooking, stirring constantly, 2 to 3 minutes longer. Season with salt and pepper. Serve immediately. Yield: 4 servings.
