Shrimp italienne

Ingredients

Quantity Ingredient
2 tablespoons Olive oil
1 tablespoon Vegetable oil
4 tablespoons Butter (salted)
1 tablespoon Minced garlic
2 Green peppers, seeded, diced
1 cup Chopped mushrooms
1 pinch Cayenne pepper
Salt and pepper to taste
pounds Medium shrimp, boiled, shelled
2 tablespoons Chopped scallions
2 tablespoons Finely chopped red onion

Directions

Contributed by Rosemarie D'Amico. She also likes to add a pinch of saffron to her rice for something extra special.

Heat the oils and 2 tablespoons of butter. Saute the garlic and mushrooms.

Add the green pepper. Season with salt, pepper, and cayenne pepper.

Sprinkle with paprika and add the remaining 2 tbsp butter. Add shrimp and shake over moderate heat for 5 minutes, covering them well with the sauteed mixture. Add scallions and onion. Serve with rice.
