Shrimp saute

Ingredients

Quantity Ingredient
2 tablespoons Olive oil
1 pounds Shrimp, peeled and deveined
3 Scallions, chopped
1 Stalk celery sliced
Salt and pepper to taste
½ medium Zucchini, thinly sliced
1 Clove garlic, minced
Juice of 1/2 a lemon
2 tablespoons Shredded coconut

Directions

1) Heat 2 tb oil in skillet. Add shrimp and cook over high heat for 3- 4 minutes.

2) Add celery and scallions to skillet. Season with salt and pepper; stir well and cook 2-3 minutes. 3) Add zucchini to shrimp mixture. add a little more oil if mixture is too dry. stir in garlic; saute for 2-3 minutes.

4) Sprinkle mixture with lemon juice and coconut; mix well. Serve hot with white rice.
