Sicilian broccoli

Ingredients

2 pounds Broccoli
2 tablespoons Butter
1 Green onion, chopped
(including green)
1 Clove garlic, minced
tablespoon Flour (all purpose)
1 cup Chicken stock or broth
2 cups Mozzarella or sharp cheddar
Cheese, shredded
Fresh ground pepper

4 Anchovies, finely chopped
½ cup Sliced black olives

Directions

Cook broccoli in salted water until tender. As the broccoli cooks, melt butter in saucepan and add the onion and garlic. Cook, stirring, about 3 minutes. Do not brown! Sprinkle with the flour and add the stock, stirring vigorously with a wire whisk. When the mixture is thickened, simmer 5 min. Add the anchovies and olives (if desired), pepper to taste, and cheese, and stir until the cheese melts. Serve over the hot, drained broccoli. Submitted By KRISTIN TREMAYNE On 02-12-95
