2½ | cup | Flour |
2 | teaspoons | Baking powder |
¼ | teaspoon | Salt |
2 | ounces | Butter |
2 | ounces | Lard |
¾ | cup | Currants |
¼ | cup | Milk |

Directions
Sift the flour, baking powder and salt into a bowl. Rub in the butter and lard with your fingers until the mixture resembles breadcrumbs. Stir in the currants and add enough milk to make a firm dough. Roll out the dough on a well-floured board to about ¼ inch thickness and cut into rounds about 2½ inches across.
Grease a heavy frying pan or griddle with a little oil and warm over low heat. Place 3 or 4 cakes in the pan and cook for about 6 minutes eachside until they are well browned. Remove from the pan, slice them in half and place a dollop of butter in the middle before putting them back together.
Keep warm in the oven until they're all cooked.
