Sinless sour cream cheesecake

Ingredients

1 | Envelope knox unflavored; gelatin | |
¼ | cup | Cold water |
¾ | cup | Boiling water |
Sweetener equal to 1/2 cup; sugar | ||
1 | pack | (8 oz.) lite cream Cheese; softened |
1 | Container; (8 oz.) lite sour Cream | |
1 | teaspoon | Vanilla extract |
Fresh fruit; optional | ||
1 | Graham cracker crust; see Instructions for this. |
Directions
Have all ingredients at room Temperature.
In blender, sprinkle gelatin over cold water. Let stand 2 minutes. Add boiling water and process at slow speed until completely dissolved. Add remaining ingredients, process until blended. Pour into 8 or 9 inch inch pie crust prepared with ¾ cup graham cracker crumbs and 2 tbs. melted diet margarine. Chill until firm. Garnish with fresh fruit if desired.
