Sinless sour cream cheesecake

Ingredients

Quantity Ingredient
1 Envelope knox unflavored; gelatin
¼ cup Cold water
¾ cup Boiling water
Sweetener equal to 1/2 cup; sugar
1 pack (8 oz.) lite cream Cheese; softened
1 Container; (8 oz.) lite sour Cream
1 teaspoon Vanilla extract
Fresh fruit; optional
1 Graham cracker crust; see Instructions for this.

Directions

Have all ingredients at room Temperature.

In blender, sprinkle gelatin over cold water. Let stand 2 minutes. Add boiling water and process at slow speed until completely dissolved. Add remaining ingredients, process until blended. Pour into 8 or 9 inch inch pie crust prepared with ¾ cup graham cracker crumbs and 2 tbs. melted diet margarine. Chill until firm. Garnish with fresh fruit if desired.
