Slim and savory spinach potato soup

Ingredients

Quantity Ingredient
4 cups Chicken broth
3 mediums Leeks white part only
Sliced OR
3 mediums Onions chopped
6 ounces Spinach trimmed and chopped
3 cups Cubed potatoes
2 tablespoons All natural sour cream and
Butter flavor sprinkle
Freshly ground black pepper

Directions

Bring broth, leeks and spinach to a simmer. Cover and cook 5 minutes. Add potatoes and cook, covered, 20 minutes, or until potatoes are tender. Puree half the mixture; return to saucepan. Stir in butter sprinkles and pepper. Serve hot or cold.
