Watercress or spinach and potato soup

Ingredients

Quantity Ingredient
3 cups Chicken or meat stock
4 mediums Potatoes; grated
1 cup Milk or cream
¾ cup Washed chopped watercress or raw spinach
teaspoon Salt
1 dash Pepper
¼ cup Grated cheese

Directions

Heat stock to boiling, add grated raw potato and SIMMER gently for 10 to 15 minutes, stirring occasionally. Just before serving, add milk, cress or spinach and seasonings. Serve hot with a sprinkling of grated cheese on each servings. 5 servings
