Smoked mackerel and banana kedgeree

1 | teaspoon | Mild curry powder |
150 | grams | Basmati rice; cooked (5oz) |
175 | grams | Smoked mackerel fillets; skinned and flaked |

2 | tablespoons | Freshly chopped parsley |
4 | Bananas; peeled and sliced | |
2 | tablespoons | Lemon juice |
Salt and freshly ground black pepper |
Directions
Melt the butter in a large pan and fry the curry powder for 1 minute.
Stir in the remaining ingredients and cook for 2-3 minutes, stirring occasioanlly.
Serve immediately.
