Smoked salmon with lemon mayonnaise

¼ cup Mayonnaise
1 tablespoon Lemon zest; minced
1 teaspoon Capers; drained and chopped
4 English muffins; split and toasted
¼ pounds Smoked salmon or lox; thinly sliced
4 slices Red onion
4 Boston lettuce leaves

Directions

Prep: 5 min, Cook: 5 min. serves 4 Combine mayonnaise, lemon zest and capers in a small bowl and mix thoroughly. Spread mayonnaise mixture over toasted English muffin. Top with salmon, onion and lettuce and cover with other muffin half. Cut sandwich in half before serving.
