Smoked salmon with lemon mayonnaise

4 | English muffins; split and toasted | |
¼ | pounds | Smoked salmon or lox; thinly sliced |
4 | slices | Red onion |
4 | Boston lettuce leaves |
Directions
Prep: 5 min, Cook: 5 min. serves 4 Combine mayonnaise, lemon zest and capers in a small bowl and mix thoroughly. Spread mayonnaise mixture over toasted English muffin. Top with salmon, onion and lettuce and cover with other muffin half. Cut sandwich in half before serving.
