Smoked trout and kiwi fruit salad

Ingredients

1 227 gram pac Scotch smoked salmon trout; (8oz)
1 Red eating apple; cored and chopped
3 tablespoons Soured cream
3 Kiwi fruit; peeled and sliced
50 grams Toasted flaked almonds; (2oz)
3 tablespoons Freshly chopped mint
Salt and freshly ground black pepper
Fresh watercress to garnish

Directions

1. Cut the trout into bite sized pieces and place in a bowl with the apple, kiwifruit, almonds, soured cream, mint, and seasoning to taste.

2. Mix well and serve immediately on a bed of watercress.
