Smoked trout potato or macaroni salad

Ingredients

Quantity Ingredient
1 pounds Hot smoked lake trout
6 cups Cooked diced potatoes or macaroni
½ cup Green onions; chopped
1 cup Cucumber; diced
1 cup Celery; diced
2 cups Mayonnaise
¼ cup Milk
2 tablespoons Parsley; minced
1 tablespoon Dill weed, dried
¼ teaspoon Pepper
2 tablespoons Lemon juice
12 Cherry tomatoes
12 slices Cucumber
Parsley; for garnish

Directions

Flake fish and mix with potatoes or macaroni, onions, cucumber, celery, parsley and dill. Combine mayo, milk, pepper and lemon juice.

Pour over fish mixture. Toss salad gently. Garnish with cucumber, tomatoes and parsley.
