Smothered liver casserole

Ingredients

1 | pounds | Beef liver; sliced |
¼ | cup | Flour |
¼ | cup | Shortening |
3 | mediums | Onions; chopped |
¼ | cup | Chopped celery |
1 | cup | Canned tomatoes |
1 | teaspoon | Salt |
⅛ | teaspoon | Pepper |
Directions
Roll each piece of liver in flour; brown lightly on both sides in hot shortening in skillet. Place liver in casserole.
Brown onions lightly; add celery and tomatoes. Simmer until heated through well. Spoon vegetables over liver; season with salt and pepper.
Cover. Baker at 350-degrees F. for 45 minutes.
