Ingredients

| 1 | pack | (3 oz) lemon or lime gelatin |
| 8 | Marshmallows; cut up, (or 32 small ones) | |
| 1 | teaspoon | Salt |
| 1 | teaspoon | Unflavored gelatin; softened in 1 tbsp. water |
| 8 | ounces | Cream cheese; softened |
| 1 | can | (small) crushed pineapple; drained. |
| 1 | Carrots; grated, (up to 2) | |
| 1 | Apple; chopped | |
| ½ | pint | Whipping cream; whipped |
Directions
Pour 2 cups boiling water over lemon or lime gelatin, marshmallows and softened cream cheese. Stir until cream cheese is melted. Add remaining ingredients except whipped cream. Cool until partially set, then add whipped cream and pour into mold and chill.
