Soft berry clafoutis

4 mediums Eggs
125 grams Caster sugar
1 Vanilla pod
¼ teaspoon Salt
1 tablespoon Dark rum
125 grams Flour
350 millilitres Milk
400 grams Cherries; stoned or fruit of
; choice
Butter; for greasing
Icing sugar; for dusting

Directions

Beat the eggs and sugar until frothy. Add the seeds of the vanilla pod, salt and the rum. Add the flour and whisk in. Add the milk.

Grease an ovenproof dish and place in the fruit. Pour over the batter and bake for 40-45 minutes.

Remove and dust with icing sugar and serve immediately with cream.
