Spanish vegetable stew w/ squash

Ingredients

Quantity Ingredient
3 larges Onions, chopped
4 larges Green bell peppers, chopped
4 larges Tomatoes, peeled & chopped
1 pounds Yellow squash, chopped
2 mediums Potatoes, cubed
5 tablespoons Olive oil
2 eaches Garlic cloves, minced
2 tablespoons Chopped parsley
teaspoon Salt

Directions

Heat oil and saute onions for a few minutes. Add remaining ingredients and a little water. Cover & simmer for 40 minutes, stirring occasionally.
