Spiced peach chutney - country living

2 | teaspoons | Olive oil |
1½ | cup | Chopped peeled peaches |
⅓ | cup | Dark seedless raisins |
2 | tablespoons | Light-brown sugar |
¼ | teaspoon | Ground cinnamon |
⅛ | teaspoon | Ground cloves |
⅛ | teaspoon | Salt |
1 | pinch | Ground red pepper (opt.) |
1 | tablespoon | Chopped fresh cilantro leaves |
1 | teaspoon | Cider vinegar |
Directions
1. In 1-quart microwave-safe dish, combine onion and oil; cover and microwave on high (100 percent) 2 minutes.
2. Add peaches, raisins, sugar, cinnamon, cloves, salt, and red pepper, if desired, to onion. Cover and microwave on medium (50 percent) 5 minutes. If microwave does not have carousel, stir mixture after 2 minutes. Uncover chutney mixture and microwave on medium 5 minutes.
3. Add cilantro and vinegar to mixture; set aside until cool. Serve or cover and refrigerate until serving.
