Spiced pineapple pork roast

Ingredients

4 pounds Bone-in pork loin roast
1 each Jar (12 oz.) pineapple preserves
2 tablespoons Honey
2 tablespoons Red wine vinegar
1 teaspoon Prepared mustard
¼ teaspoon Salt
¼ teaspoon Ground cinnamon
¼ teaspoon Ground cloves
1 can (8 oz.) pineapple slices, drained

Directions

Place roast on rack in shallow roasting pan. Insert meat thermometer into thickest part of roast, not touching bone. Roast, uncovered, in a 325 oven till meat thermometer registers 170, about 2-¾ hours.

Meanwhile, in small saucepan, combine pineapple preserves, honey, vinegar, mustard, salt, cinnamon, and cloves. Cook, stirring constantly, over low heat till preserves melt. During last 20 minutes of roasting time, garnish roast with pineapple slices and brush with pineapple glaze several times. Serve remaining glaze warm with roast. Makes 6 servings.
