Spicy hot black beans

Ingredients

12 | ounces | Black beans; (try other beans as well) |
Spring water for soaking and cooking | ||
2 | cloves | Fresh garlic; minced, =OR=- |
1 | teaspoon | Bottled garlic |
2 | teaspoons | Fresh parsley, minced |
1 | teaspoon | To 2 ts curry powder; |
½ | teaspoon | Cayenne pepper, or to taste |
Directions
Soak black beans in water overnight. Drain beans. Place in a large skillet along with fresh spring water. Bring to a boil. Reduce heat, and add garlic and parsley. cover and simmer 1-½ hours. Check the water level occasionally, adding more as needed. When beans are tender, uncover and add spices. Cook uncovered until water has evaporated and the beans reach the desired consistency. Serve hot. This is delicious mixed with brown rice. This recipes also freezes well. Serves 6.
